Whether you are baking for yourself or someone else, learn how to bake for wheat-free, diary-free or gluten-free diets. During this practical course Brian Murphy, a master miller, will introduce you to different flours and ingredients to produce top quality breads, cakes and more that caters for special diets. 

Bring an apron and a container or bag to take your baking home in.

Tutor Brian Murphy is a Food Scientist with over 20 years experience in the Food Industry, the majority of it in specialised dietary needs and products. He has worked for two of the biggest European gluten-free food manufacturers, and subsequently developed his own premium range of gluten-free, wheat-free and dairy-free flours.

The course includes:

Bread makers – a quick demonstration on how to use a bread maker for both white & brown yeast-raised breads, which settings to use and why.

Yeast-raised breads (white and brown) – how to make the perfect gluten-free bread using a standard electric mixer or by hand.

Brown soda bread – a traditional style of bread which does not require yeast and can be made suitable for vegans.

Pizza bases – two types of pizza base, one the traditional yeast-raised one and the second a quick pizza suitable for a yeast-free diet.

Comparison of different bread types – how the flavours and textures differ

Pastry - so simple to make and so versatile. Suitable for sweet or savoury baking.

Swiss Roll – more than a sponge cake – something to impress and amazingly simple.
