The programme offers you an insight into the history and theory as well as the practical methods for smoking food. The course focuses on 'home smoking' and helps you to get the best out of a home smoker. You will learn how to hot and cold smoke food and even how to make your own smoker. You will be smoking over 12 different types of food from chicken, prawns and olives to salmon, mushrooms and almonds and much more! You will be smoking on five different types of smokers – anything from a commercial home smoker to a filing cabinet! At the end of the day you will sit down with a glass if bubbly and taste all the food you have smoked. Then you get to take home a ‘goodie bag’ of everything that is left. The price includes all smoked food, refreshments, lunch, and comprehensive smoking notes. Accommodation is available if required - see booking page. Your tutors, Jo and Georgina, downshifted from London, looking to improve the quality of their lives in more beautiful surroundings.
